These cookies are loaded, or rather, overloaded as Dorie says with dried fruits, chopped nuts, coconut, oats and chocolate! I swear I added like 4 cups of mix-ins at the end. They were unbelievably thick.

Since there are just the two of us. I pulled my usual routine and packed some up for both of our coworkers and some family members. This batch made 44 cookies for me.

One of my favorite parts about sharing goodies with our friends and family is the feedback. It is so much fun to see how people liked (or disliked) each treat and hear what sticks out to them.

Here's what my people had to say:
"These cookies are kind of good because you have to hunt for the different flavors."
"They're something different about these cookies. Almost a bitter, yet addictive taste."
"I'm loving these healthy cookies!" (spoiler: these cookies still have butter, sugar, eggs, nuts, and chocolate! ;)
"These cookies make for a great breakfast!"
"These are the power bar of cookies!"

And what did I think? I liked them. I'd make a few adjustments: like only adding one type of dried fruit...probably just figs. I found that a combo of figs, craisins and raisins just got confusing. However, my friends liked it.
I also liked the molasses application. It made these unique. I also think I'd toast the coconut next time...just to mix things up a bit and possibly add a bit of refinement.

What a great analogy - you DO have to hunt for the ingredients that you love (or dislike) - as I've found out. I loved these - and yours look perfect! I'm with you - the molasses was a great choice and like your idea of toasting the coconut. Nicely done this week!

I didn't use molasses though. I subbed brown sugar.
Cookies are always great for sharing, right? These did have sort of a healthy aspect to them, but they are still cookies. They look really good.
I just had one for breakfast, it worked! Great cookie, hubby said it was his new favorite cookie!
Toasted coconut is always a good variation. Nice idea!

Had to laugh at the "healthy cookie" and "breakfast cookie" comments. I'm afraid to find out what the calorie and fat content is for these cookies.
Well, they "look" healthy! Anything with nuts and dried fruits can't be that bad :) I may just have to make a batch to know for sure!
I love that cookies with oats and dried fruit are considered healthy - of course no one takes in the fact that dried fruits aren't healthy, but instead loaded with sugar and carbs - on top of the chocolate, eggs, butter, and in this case, shortening! haha! Your photos are so so so beautiful and I am so glad they were so well received!
Your cookies look delish and were an obvious hit with everyone! =) I would have loved to use dried figs if I could have found any! I love the flavor of molasses too!
I packed most of these up for my coworkers and parents too, they loved them. I wasn't too keen on the oats part though...
These did seem healthy, even though they weren't exactly low cal.

Your mix sounds yummy! I used to sit near the kitchen at my office and thought it was fun to overhear people's reactions to baked goods I left in there.
