It seems like there is a resurgence of no-bake cookies all around the web these days. I have so many memories of those chocolate oatmeal treats as a child. But to be honest, I haven't had them for nearly a decade. Not because they aren't good, but because I've just gravitated to other cookies and really, forgotten about them. Then earlier this week I was inspired to get in my kitchen and cook up my own version after I saw Cookin' Canuck's Light(er) take on the yummies. The fun of the no-bake cookie comeback are the great twists food bloggers have made to this classic, quick-cooking treat.
Today I'm adding to the list of new takes on the no-bake cookie with my Brown Butter and Dulce de Leche No-Bake Cookies.
At first bite you experience the salt from the fleur de sel. Then your palate is flooded with buttery, milky caramel flavor. I'm such a sucker for dulce de leche. Add all that to the oatmeal chew and you'll keep coming back for more and more. Give my Brown Butter and Dulce de Leche No-Bake Cookies a whirl, they're even great straight from the freezer. Brown Butter & Dulce de Leche No-Bake Cookies

Ingredients:
3 TB unsalted butter
1 tsp fleur de sel + more for topping
13.4 oz. can dulce de leche (or homemade, around 1 cup)
1/2 c. milk
3 c. old-fashioned oats
Directions:
Brown butter over medium heat, keeping a keen eye on the stove. First the butter will melt, then it will go bubbly and frothy. Not soon after it will go brown. You want to take the butter off heat as soon as it gets a deep golden otherwise it will burn soon thereafter.
Immediately add fleur de sel and stir until dissolved. Then add the dulce de leche and milk until it's smooth and silky. Return to heat and bring to a boil for 1-2 minutes until it thickens like caramel. Stir in oats one cup at a time.
Place tablespoon-sized balls onto parchment paper and sprinkle with fleur de sel. Let come to room temperature for about an hour before serving or place in refrigerator or freezer until cool.

Thanks, Lindsey! They really are evil. I love anything and everything that has dulce de leche in them. And that fleur de sel really makes them special!
I toyed around with adding in vanilla, but just didn't. I think it keeps them more milky caraemly. I'm going to try it soon though.
