There are some ingredients in the world of food that are team players. They're not always the MVP but if they are missing, it's never the same. You could say this about bacon. It's not usually the main ingredient. It's often sprinkled on top, mixed in and for those who aren't afraid of it...bacon drippings are used in place of oil. The ironay is that eaters are drawn to the bacon aspect of the dish.
I love bacon. Most of the recipes I make in my kitchen that call for bacon are used this way. But on the rare occasion that bacon is the star of the dish, life just gets better. When I was making my new favorite bacon recipe, these grilled cheeses, I got thinking about the preparation and my guess is most of America does not make bacon the way we do. We bake it in our oven.
I love this technique. It frees up the stove top and I find it to taste better than when we make it in the microwave. Sure you've got to preheat your oven, but who cares. Oven-Roasted Bacon
Ingredients:
6-8 slices*
Directions:
Preheat oven to 400 degrees, placing oven rack in middle. On a baking sheet place bacon strips next to each other. Bake bacon in oven for 12-15 minutes, rotating halfway through. If using thick-cut bacon add a few more minutes. Bacon will be ready when brown and crispy. Take bacon out of oven and set on individual plate on top of a few paper towels. Let towels absorb bacon drippings.
*Recipe doubles easily, you can even let the bacon overlap a bit.
