Lingonberry and Greek Yogurt Waffle Topping


I've been going nuts over Lingonberry jams and preserves. If there's one jam I'm using during December, it's lingonberry jam. I pair it with my Swedish meatballs, spread it on toast, top my Great Grandmother's Swedish Pancakes with it and the other day I even made shortbread cookie caves featuring the tart and sweet berries. Today I'm sharing a quick, two-ingredient, way to enjoy lingonberry jam any month of the year--with my Lingonberry and Greek Yogurt Waffle Topping.



If you are new to lingonberries, welcome! Your world of fruits and fruit preserves just got better. Lingonberries are native to Nordic climates and countries, among many other areas of the world. They are sweet, tart, bitter and sometimes sour. Their complexity is addicting and each bite is a fun new taste. This recognizable quality makes an excellent candidate for a creamy pairing.


Eating waffles is a special occasion in my home. Waffles are after all, basically dessert for breakfast. Even if I am knowingly indulging in them, somehow I feel more justified in eating waffles when adding yogurt. The addition of protein and calcium must aides that subconscious of mine.





The result is creamy, tart, fruity and bright. It livens up the waffles both aesthetically and tastefully. I hope you'll give lingongberries a try in the form of my Lingonberry and Greek Yogurt Waffle Topping recipe.


 

Lingonberry & Greek Yogurt Waffle Topping

Ingredients:
1/4 - 1 c. lingonberry preserves or jam (I like Ikea, Felix and other imported brands.)
1 c. vanilla Greek yogurt (I like to use Chobani Vanilla)

Directions:
Mix greek yogurt with lingonberry jam, beginning with 1/4 cup. Increase until desired sweet and tartness combo is achieved. Serve over waffles or pancakes and top with more lingonberry jam. Pure maple syrup is excellent with this topping.

Note: I enjoy a 1 to 1 ratio, whereas my husband likes about a 1 to 3 ratio, using much less lingonberry. The ratio will also depend on the brand you use. Decrease the recipe, using ratios, according to your needs. Or make a large batch and use it for a few days on ice cream, fruit, granola and oatmeal.

great idea for waffles!! I've been spreading a homemade apple butter on mine recently but lingonberry yogurt... that sounds even better!!
