Milk Chocolate Raspberry Heart Cups

Today, Lindsey and I are sharing chocolate recipes for Valentine's week! Make sure you check out her blog to see her Lavender Chocolate Pots de Creme

I haven't the slightest idea when chocolate became synonymous with Valentine's Day. Perhaps the continual push that it is a woman's day and it's practically science that women love chocolate. Over the years I've opened my vanilla-centered heart up to chocolate, I've got Mr. Brownie to thank for that, along with a darned good local chocolate company

In the spirit of love and chocolate, I made a homemade version of one of Harry and David's lovely creations, their Milk Chocolate Dipped Raspberries. They are perfect (and simple) with only three ingredients that you shape into a heart.

All you need is a high-quality chocolate, (I chose Amano Milk Chocolate), fresh raspberries and white chocolate. That's it. Just melt the chocolates, pour into candy cups of your choice, top with three raspberries, and drizzle with white chocolate. I like to make an indent in the cup to accentuate the heart shape that the three raspberries create.

I also tried a few in mini silicon cupcake liners. These will be a bit larger but the more chocolate the better? If you're looking for a Valentine's Day gift or dessert this week, my Milk Chocolate Raspberry Heart Cups are easy, full of that desirable chocolate and fruit combination and perfectly festive.

Ingredients
4 oz. high-quality milk chocolate, chopped
pint of fresh raspberries, rinsed and dried
1/2 c. white chocolate, chopped

special equipment: candy cups, pastry bag, coupler and round pipping tip

Directions:
Melt milk chocolate in microwave. Start with 30 seconds then stir with spoon, repeat one or two more times until chocolate is glossy and almost all the way melted. Stir until smooth. Spoon into candy cups, about 3/4 way full.

Place three raspberries in each cup. Then with index finger lightly push the candy cup in between the top two raspberries to form the top of a heart.

Melt white chocolate in microwave according to directions above. Spoon melted white chocolate into pastry bag fitted with small round tip. Drizzle white chocolate onto raspberries. Let set for 30-60 minutes and serve. Refrigerate extras.

These are absolutely adorable! I wish I'd seen them in time for Valentine's Day, but who says you need a holiday as an excuse to enjoy chocolate? :)
